Introduction

I am a huge fan of churros, which are basically fried doughnuts. They’re crispy and sweet, and they make a great dessert or snack. I’ve had many versions of these in Spain, but I think the best ones are made with chocolate instead of cinnamon sugar. This recipe is adapted from one at TheKitchn.com for “churros con chocolate” that uses cocoa powder instead of cinnamon for coating the doughnuts before frying them in vegetable oil until golden brown (or as dark as you like).

  • 1/2 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 tbsp baking powder
  • 2 tbsp cocoa powder
  • 3/4 cup sugar
  • 1 egg white
  • 1/2 tbsp vanilla extract
  • 3 cups vegetable oil

  • Baking powder is a leavening agent. It helps make your churros soft and fluffy, as well as browned. Baking powder is a mixture of baking soda and an acid (such as cream of tartar), which causes carbon dioxide gas to be released when it’s heated up in the oven.
  • The amount you’ll need depends on how large or small your churros are; if you’re making large ones, use about 1/2 teaspoon per churro!

Beat the egg white until it’s stiff and holds its shape, but not so long that it becomes dry and grainy. The easiest way to do this is with a fork–just be sure not to use an electric mixer!

1/2 teaspoon vanilla extract

Vanilla extract is a flavoring made from vanilla beans. It’s used to flavor desserts and ice cream, but it can also be used in savory dishes and cocktails. Vanilla extract is often added to baked goods such as cakes or cookies, but you can also use it when making homemade yogurt by adding a few drops before incubation!

Vanilla beans are the fruit of an orchid plant that grows wild in tropical climates around the world (including Mexico). The vanilla bean pod contains tiny seeds that are scraped out and steeped in alcohol to create pure vanilla extract–a process which takes several months!

3 cups vegetable oil, for frying

The oil should be hot enough to cook the churros. To test if your oil is hot enough, drop a small piece of dough into it; if it starts bubbling immediately and turns golden brown within about 30 seconds, your oil is ready for frying. If you’re not sure how much vegetable oil to use for this recipe, just remember that each churro needs about 2 tablespoons of batter–so multiply that amount by three (the number of churros) and add it all up! You’ll want enough oil in your pot or pan so that when they’re done cooking and floating around on top of their bathtub-like waterslide ride through deliciousness land (AKA heaven), they aren’t touching each other or anything else floating around with them…you know what I mean?
