Introduction

Butter chicken is a popular Indian dish that consists of chicken in a tomato-based sauce. The chicken is usually cooked with butter, almonds and cashews for added richness and flavor. Traditionally, the sauce uses heavy cream, but this version skips it for a lighter option that’s still just as delicious!

Butter chicken

  • 1 tbsp ghee
  • 2 tbsp garam masala
  • 1 tbsp ground cumin
  • 1/2 tbsp turmeric
  • 1 cinnamon stick
  • 2 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tbsp tomato paste
  • 3 tomatoes
  • 3/4 cup cream
  • 2 boneless, skinless chicken breasts

1 tbsp ghee (clarified butter)

Ghee is a clarified butter that’s been cooked until most of the moisture evaporates. It’s buttery and delicious, but it doesn’t need to be refrigerated because there’s no water in it. You can make your own ghee by melting unsalted butter over low heat and simmering for about an hour, skimming off any foam that forms on top.

You can use regular old salted or unsalted butter for this recipe, but I prefer to use ghee here because it has a higher smoke point than butter does—and if you’re anything like me when it comes to cooking Indian food, your dish will be bound to get at least slightly burned somewhere during the process (my apologies).

Besides its higher smoke point, another reason why I chose ghee above other types of fat was because its flavor complements the spices used in this dish wonderfully well—it adds richness without overpowering them.

2 tsp garam masala

Garam masala is a blend of spices. It is used in Indian cuisine and also in many other cuisines around the world.

It includes cumin, coriander seeds, cinnamon and cloves among other things.

1 tsp ground cumin

  • 1 tsp ground cumin

This spice is used in many Indian dishes, and it’s a good source of iron, which can help reduce inflammation. It also helps with digestion, which means that this meal will be easy to digest even if you don’t have much time between eating and getting on with your day!

1/2 tsp turmeric

Turmeric is a spice that’s commonly used in Indian and Asian cuisines. It’s also an important ingredient in curry powder, which is widely used to season meat and vegetables in these cuisines. Turmeric has a bright orange color and tastes somewhat bitter or earthy with a hint of pepperiness.

1 cinnamon stick

To make this dish, you’ll need:

  • 1 cinnamon stick
  • 2 tablespoons of masala butter chicken paste (this can be found in your local store)
  • 4 chicken breasts, diced and marinated overnight in 1/2 cup of yogurt and salt and pepper to taste.

2 cloves garlic, finely chopped

Garlic is a member of the Allium family, which also includes onions, leeks and chives. It’s used in many cuisines around the world and is known for its distinct flavor.

Garlic has been used throughout history as a medicinal herb to treat stomach problems, infections and even halitosis—a fancy word for bad breath!

1 tbsp fresh ginger, finely grated

To make ginger paste, break off a 2-inch piece of fresh ginger and use your thumb to press it down along one side. Gently move the ginger back and forth over the cutting board until you have grated enough to create 1 tablespoon of pulp. You can also use a Microplane to grate small amounts at a time if you prefer not to deal with the messiness of dealing with fresh ginger.

2 tbsp tomato paste

Tomato paste is a concentrated form of tomatoes. It can be bought in a tin or can and is used to make sauces, soups or stews. It’s best stored in the fridge for up to 3 months, or frozen for up to 6 months.

3 tomatoes, chopped

  • Chop the tomatoes into small pieces.
  • Chop the tomatoes into medium sized pieces.
  • Chop the tomatoes into large pieces.
  • Chop the tomatoes into small diced pieces.

3/4 cup cream

You can use milk, heavy cream or half and half in this recipe. If you want to use butter, it will still taste good but the richness of cream will add a nice flavour to the sauce.

2 boneless, skinless chicken breasts cut into bite-sized pieces

To make this recipe, you’ll need to cut your boneless, skinless chicken into bite-sized pieces. Use a sharp knife and keep it at a 45-degree angle when cutting through the meat. The tip of your knife should be almost touching the surface of the board as you slice into the chicken breast. Cut against the grain, working from side to side rather than in long strokes from top to bottom.
