Chicken Wrap

  • 2 shredded cooked chicken
  • 1/2 cup green onions
  • 1 can crushed pineapple
  • 1/3 cup mayonnaise
  • 4 whole wheat tortillas
  • 2 cups shredded romaine lettuce

Shred the chicken. Place the cooked chicken in a large bowl and use two forks to shred it into bite-size pieces.

Measure 2 cups of shredded chicken (about 10 ounces). Transfer to a large bowl, cover with plastic wrap, and refrigerate until ready to assemble wraps (up to 2 days).

  • Spread the hummus on both circles of dough (either spread on one side and tuck under the other or spread on one side and then flip).
  • Place chicken strips across the center of each circle, leaving ample room at both ends because they will get folded over toward those edges (you can also do this with a regular wrap sandwich by placing all ingredients inside a pita pocket)
