  • 1 tbsp pure vanilla extract
  • 2 tbsp all-purpose flour
  • 2 ounces bittersweet chocolate (70% cacao)

  • Add the sugar to the butter and mix with a wooden spoon until well combined.
  • Add vanilla extract, then eggs, one at a time.
  • Fold in flour until just combined (do not overmix).

If you are in a hurry and can’t wait for an hour, place the eggs in a bowl of warm water for 5 minutes. If you don’t have time for that either, just set them out on the counter so they can come to room temperature naturally over time.

  • Use the best quality vanilla extract you can find. If you don’t have vanilla extract, use 1/2 teaspoon of vanilla bean paste. If you don’t have vanilla beans or paste, use 1/2 teaspoon pure vanilla powder (not imitation).
