You will need:

1 kg tomatoes (I used 500g of cherry tomatoes and 1kg of peeled plum tomatoes)

  • 2 large onions, finely chopped. If you’re using a food processor to chop them up, cut them in half first so that they’ll fit better in the machine. You can also use red or white onions if you prefer them over yellow ones. If you don’t like onions at all, try substituting some celery instead!
  • 2 cloves garlic (or 1/2 tsp dried garlic powder)
  • 1 tbsp red wine vinegar or lemon juice (optional)

1 cucumber, peeled and cut into chunks

  • Peel cucumber and chop into chunks.
  • Add to soup
